I’m not a big fan of casseroles but when it’s been a long day and I’m tired, they can be quick and convenient. I’m also not a fan of canned foods, always preferring to use fresh when possible. But did I mention it was a long day and I’m tired? Ok, enough said. Don’t judge. This casserole in particular is super easy, super quick and is always a hit with the family. Just like this casserole, this blog post will be super quick as well. Here’s the ingredients and directions. Now I’m going to sink into the couch and stare at the tv for a while. Enjoy!!
1 pound ground beef
1 can Rotel diced green chiles and tomatoes (drained)
1 small can diced jalapenos or diced green chiles (drained)
1 packet HOT taco seasoning mixed with 1/2 cup water
1 cup sour cream
2 cans refried beans (I used spicy jalapeño for a little extra flavor)
Grated cheddar or Mexican blend cheese (about 2 cups)
Tortilla Chips (I made my own because well…their just better)
Preheat oven to 350 degrees
Spray 9 x 12 casserole dish with cooking spray
Brown ground beef and drain fat. Add can of Rotel, jalapenos (or green chiles), sour cream and taco seasoning/water mixture. Stir to combine well. Reduce heat and simmer until mixture thickens.
Warm beans so they are easier to spread
Once beef mixture has thickened, lay one layer of tortilla chips in bottom of casserole dish and spread 1/2 the refried beans on top of the chips. Spread 1/2 the meat mixture on top of the beans and cover with a layer of cheese. Repeat the layers.
Bake in oven for 20 minutes or until top layer of cheese is bubbly and starting to brown.
Serve immediately with a side salad or veggie.
