So this is just one of those funny stories to share about my trials and tribulations in the kitchen. Yes, they still happen. I was preparing lunch for my son today and set the oven to 425 and walked away. A few minutes later, I thought to myself, “oh, I think I left a pan in there from last night and I’m pretty sure it has cornbread in it.” I know, I know, you’re wondering why the cornbread is still in the pan in the oven? Well, I took it out to serve with dinner and put the leftovers back in the oven because I was lazy and didn’t feel like taking the time to wrap it up so I just shoved it back in the oven until I had a little more energy. It seemed to make perfect sense at the time. So back I go to the kitchen today and sure enough, the pan is in the oven and the cornbread is a not so appealing blackish-brown color. As I’m rescuing the cornbread, the doorbell rings so I toss the cornbread onto to counter and head for the door. It’s a package and it’s for me!! I love packages!! Especially when I know there are new shoes inside. So I take my package to my home office and eagerly open it to get to the beautiful new shoes waiting to brighten my day, sit down at my computer to answer a few emails and my son says, “mom is my lunch ready?” Oh no!!! Oh no!!! I forgot to put his lunch in the oven. And my poor baby boy is starving!!! We head back to kitchen to find the oven door wide open, heating the house but not the food which is sitting on the counter next to the burnt cornbread. My son was cool about it. I put his lunch in the oven, made sure to close the door and walked back to my office just shaking my head. It’s been one of those days and for that reason, I’m headed to my favorite Mexican restaurant to have a margarita or two…wearing my new shoes of course.
