Another busy day left me staring at the refrigerator at 5:45 pm wondering what on earth I’m going to fix for dinner…and quickly because I’m already being hounded by two hungry kids.
Well let’s see…I’ve got one package of Hamburger meat that is going to spoil soon, one package of hot sausage that is expiring soon, one yellow onion getting really soft, a bunch of cilantro losing its zest and 10 cans of pinto beans because they were on sale.
I started browning the hamburger meat and sausage together in one pan and just sort of winged it from there. And the result was this sort of cross between ranchero beans and a Mexican chili. And it was good!!
Here is my “Use What You’ve Got Recipe”. Enjoy and Happy Cooking.
Use What You’ve Got
1 pound hamburger meat
1 package Jimmy Dean Hot Sausage
1 can Petite Diced Tomatoes (with liquid)
1 can Pinto Beans (with liquid)
1 Diced Onion (sautéed in seperate pan if you prefer your onions soft)
1/2 can Diced Jalapeños (or 1 fresh if you’ve got it)
1 handful Cilantro
Dash of Garlic Powder and Chili Powder
Brown hamburger meat and sausage
In separate saucepan, add everything else. When hamburger/sausage mixture is cooked thoroughly, add to saucepan (do not drain fat). Simmer for approximately 30 minutes. Serve and enjoy.
Really good with a dollop of sour cream
